Quick, easy, and oh so delicious. My memories of these include a cup of Maryann’s cafe au lait in the Country Place Hotel’s sunny breakfast room…
Dry Ingredients
2 C flour
1/2 C sugar
3 tsp baking powder
1/4 tsp salt
1/2 C frozen cranberries (cut in half)
1/2 C blueberries (whole)
1/2 C pecans or walnuts
1/2 C raisins (soaked in hot water and drained)
3/4 large apple (diced)
Wet Ingredients
3/4 C milk
1 egg (beaten)
1/3 C canola oil
Directions
Mix wet ingredients into dry ingredients. Spray muffin tins (this recipe makes 24 small muffins). Fill and sprinkle with sugar crystals (raw sugar).
Bake at 400 degrees for 20 minutes… and enjoy!
